Curried Pumpkin Soup

It is really feeling like fall here in Kansas. It has me craving the flavors of fall and that means pumpkin. I really like all things pumpkin and this soup is no exception. I have talked about how my family is not a big fan of soup. This is a soup I make just for me. I will make it at the beginning of the week and have it for lunch for several days. It is a special treat.

This soup only take a few minutes to prepare. You simply mix all the ingredients together and heat through. It is that simple. There is one ingredient that is very important to this recipe, apple cider vinegar. Apple cider vinegar adds a touch of acid that is key to balancing this soup. When you have any dish that doesn’t taste quite right there are two elements that can improve the dish. The first is salt. It is very important to salt your food well. I am a big fan of coarse Celtic sea salt. The second element is acid. Lots of ingredients can add acid. Lemons are at the top of my list. But, when you want a clean and earthy acid to stand up to the earthy pumpkin, apple cider vinegar is the best choice. It only takes a splash to bring the soup into perfect balance. You won’t taste the vinegar, but you would miss it if you neglect to add it to the soup.

This creamy soup is full of warm spice. It comes together in minutes. Simply mix all the ingredients and heat through.

Ingredients

  • 1 14-15 ounce can pumpkin
  • 2 Cups Chicken Broth
  • 1Cup Heavy Cream
  • 2 teaspoons Apple Cider Vinegar
  • 1 teaspoon Cumin
  • 1 teaspoon Curry Powder
  • 3/4 teaspoon Coarse Sea Salt
  • 1/2 teaspoon Hot Pepper Flakes
  • 1/2 teaspoon Sugar

Instructions

    In a medium saucepan mix all ingredients.
    Heat over medium-high heat until warmed through.
    Serve

Notes

You can use vegetable broth to make this vegetarian.

Do not skip the apple cider vinegar. The soup needs a little acid to balance the flavors.

I like to top it with a few toasted pumpkin seeds.
