Do you struggle with feeding your family vegetables or cooking side dishes for dinner. You are not alone. In this episode, Marie talks about how she shrugged off the subject of vegetables, but when she dug deeper realized there were lots of things she was doing with veggies.
Inspired by a post in the Facebook group, Marie goes through her go-to ways for cooking veggies.
Ginger Glazed Carrots:
4 large carrots, peeled and cut into 1 inch chunks
1/4 Cup water
1 Tablespoon brown sugar
1Tablespoon butter
1/2 teaspoon ground ginger
1/4 teaspoon salt (I like Celtic Sea Salt)
Place all ingredients in a small saucepan and bring to boil over high heat. Boil on high for 5-8 minutes until the carrots are tender and the sauce has reduced. Serve immediately.
