It is an extra-busy time of year and when life gets hectic it is easy to neglect taking care of ourselves. During December I have to be careful to make sure I am getting enough sleep and exercise and I have to make a special effort to make sure I feed myself well.
Feed Your Family Tonight is all about taking care of our families, but we have to take care of ourselves first. It is like the airplane oxygen warning. You need to put the oxygen on yourself before you put it on your children. For me that means I am making sure I have nutritious food for my lunches.
I often make several extra portions of dinner for my husband and kids to eat for lunch and I am left eating a random cheese stick and a handful of cheez it crackers. Taking care of myself means making food just for me to eat for lunch. Some of my favorite make ahead lunches include:
I will make a big batch of soup and freeze it in mason jars. It is important to leave at least one inch of space at the top for the soup to expand as it freezes. My friends recommend Souper Cubes and I have put them on my list for Christmas.
