Crispy Oven Anything is a simple technique for baking meats and vegetable in a breading. This podcast is for people who use recipes for suggestions. If you want a specific recipe, follow the Crispy Oven Fish recipe in my cookbook.
Step 1: Salt the meat or veggies and cut into the size you prefer. Let the salt sit for 10 minutes or up to a few hours if you can.
Step 2: Create a breading station with plates and bowls of flour, egg, and breadcrumbs. (I like whole wheat Panko.)
Step 3: Season the breading components. Good seasonings include salt, pepper, parmesan cheese, smoked paprika, lemon pepper, and lemon zest. Thin the egg with water, milk or Dijon mustard.
Step 4: Get your baking tray ready. Use a rack on a rimed sheet for meat and line the pan with parchment for easier cleanup.
Step 5: Pick one “wet hand” and one “dry hand.” Use the “wet hand” to drop the meat or veggie in the flour. Use the “dry hand” to sprinkle the flour over the food then drop into the egg. Use the “wet hand” to remove from egg and drop in the bread crumbs. Then, take the food out of the breadcrumbs with the “dry hand” and place on the baking sheet.
Step 6: Freeze or bake at 450 degrees Fahrenheit. Cook meat to 165 degrees. I like an instant read thermometer.
