Episode 166 [Coaching Replay] Small Changes Make Dinner Easier with Rita and Gino

Rita and Gino Rossini have 5 kids and a super busy schedule. Rita is a nursing student and Gino works full time. Between school, work, and kids activities, getting dinner on the table is a challenge. 

In this on-air coaching call, Marie talks with Rita and Gino and helps them make small tweaks to make dinner a little easier in their home.

One small change they plan to implement is to make double of some meals and immediately set the extra aside for another dinner. They were frustrated that food was going to waste because their kids preferred to make sandwiches or quesadillas rather than eating the leftovers in the refrigerator. By designating the extras for another dinner they are solving two issues. 1-The food is no longer going to waste. 2-They have an easy re-heat dinner for a busy night. 

Another small change that will pay off big time is to cook a large amount of chicken when it comes on sale. They can use the cooked chicken for chicken salad, quesadillas, and tortilla soup. My recipe for Instant Pot Lemony Chicken Thighs has the cook times for chicken thighs in the Instant Pot, and my Buffalo Chicken recipe has cook times for chicken breasts.
