Episode 81 Proteins- Cook Once, Eat All Week

One of my favorite tips for helping busy families with dinner is to cook proteins for re-purposing. I’m not talking about spending several hours on the weekend prepping all your meals for the week. This is much simpler than that. It is just making a little extra to have later in the week, or to put in the freezer.

 

I have found that having the protein pre-cooked makes cooking dinner fast and easy.  It is the “Cook Once, Eat Twice” idea taken to the next level.

Chicken

I like to make Lemony Chicken Thighs or Grilled Chicken. You can turn that into so many different meals.

Chicken Noodle Soup

Chicken Fried Rice

Quesadillas

Chicken Salad

Chicken Pasta

BBQ Chicken Sandwiches

Rice Bowls

Chicken Caesar Salad

Chicken Nachos

 

Pork

If you have a family member who likes to smoke meat, have them smoke a large pork butt or shoulder.

Carnitas

Beef

I like to grill an extra steak or brown lots of hamburger.

Fajitas

Quesadillas

Salads (with or without fried goat cheese)
