Pepperoni Pizza Puffs

My kids are always coming home from school and asking “what’s for snack?” Most days, I tell them to grab a piece of fruit or look at the leftovers in the refrigerator. On occasion I will make something just for a snack.  I don’t like to feed my kids lots of sweets right after school. These puffs are savory and satisfying and make a  perfect for lunch or a hearty snack.

They are very simple to make and pack lots of protein from the eggs and milk. I like to serve them with a little marinara sauce. (I usually use one from a jar.) They come together start to finish in under 25 minutes and are totally addictive!

Pepperoni Pizza Puffs

Cooking Spray

5 oz Bag Turkey Pepperoni, chopped

1 Cup Shredded Mozzarella Cheese

1 Cup Milk (I use whole milk.)

6 eggs

1 Cup White Whole Wheat Flour

1/2 teaspoon Coarse Sea Salt

1/2 teaspoon Garlic Powder

1 teaspoon Italian Seasoning

Marinara Sauce for dipping (optional)

Directions

Preheat oven to 425.

Spray 24 muffin cups with cooking spray. Divide the chopped turkey pepperoni evenly among the 24 muffin cups. Then, divide the cheese evenly among the muffin cups being careful to keep it in the center of each cup. (If it touches the edges, it can stick and make the puffs difficult to release from the pan.)

In a blender, add the milk, eggs, flour, salt, garlic powder, and Italian seasoning. Blend for 20 seconds, scrape down the sides if necessary and blend another 10-20 seconds. Pour the batter over the cheese and pepperoni in each muffin cup.

Bake at 425 degrees for 15 minutes. They will puff up and the edges will start to brown. Carefully remove from muffin pans and serve immediately with warm marinara sauce.
