Pina Colada Popsicles
(2 ingredient, vegan, paleo, no sugar added)
I love popsicles in the summer, but they have to be simple to make. Summer is a slower time in our home and these easy popsicles are a perfect healthy treat on a hot afternoon.
There are only 2 ingredients, canned pineapple and coconut milk. I prefer the full-fat coconut milk and crushed pineapple. You want to get the canned coconut milk, not the refrigerated “coconut milk beverage.”
Pina Colada Popsicles
1 – 20 oz can crushed pineapple
1 – 13.5 oz can coconut milk
In a blender, mix the crushed pineapple and the coconut milk. Pour into popsicle molds and freeze for 8 hours or overnight. Remove from molds and serve, or immediately put into a plastic zip top bag and freeze. They will keep in the freezer up to two months.
