Weeknight Brownies
2/3 cup butter, melted
2 Tablespoons oil (I use melted coconut oil)
1 3/4 cup sugar
1 Tablespoon vanilla extract
3 eggs
1 1/3 cups white whole wheat flour
1 cup cocoa powder
1 teaspoon baking powder
1/2 teaspoon table salt
Parchment paper
Cooking oil spray
Mix the sugar, butter, oil, and vanilla in a large bowl. Add the eggs. Mix in remaining ingredients. Spray a 9×13 pan with cooking spray and line with parchment paper. Pour batter into pan and bake at 350 degrees Fahrenheit for 20 minutes. *Note, this recipe was inspired by Cooks Illustrated.
